Mayonnaise is perhaps one of the sauces, together with ketchup, more used and known. Mainly children are tidbits especially when they start to savor tastier foods. Today we prepare an ultra light and absolutely vegetarian mayonnaise that will give everyone the opportunity to eat in quantities without any contraindications. The taste will obviously not be the same as the classic mayonnaise with eggs but, I can assure you, that for consistency and appearance will not have anything to envy. Perfect with the fries is also great on the meat or on the fish. Let's try to prepare it together.

1 small white cauliflower
1/2 Glass of milk
Nutmeg to taste
Salt and oil E.V.O. Taste
We bring to boil abundant salted water and dive into the cauliflower cut into small pieces and almost the same size so that they cook all in a uniform manner. Let's Cook 15 ' since it will retake the boil, then scoliamolo, keeping the cooking water aside, and trasferiamolo in a sufficiently large frying pan.
Add a tablespoon of oil and let it jump for 1 ' then add the milk and let it cook until the cauliflower has absorbed much of the liquid. We transfer everything in mixer and mix by adding two tablespoons of oil, a grated nutmeg and a couple of ladles of cooking water. If the mixture is too compact, add more water. We regulate salt and we can use our vegetarian mayonnaise.
We pour the mayonnaise so obtained in some bowls to offer our diners who will be free to use it in the quantities and for the pairing that they would most like.
