Dear friends, today we will devote ourselves to the preparation of a first with seafood that normally are not used so commonly as, for example, clams. It's about the sea razor. With the addition of the date, this first acquires sweetness, an excellent contrast with the intense taste of the shellfish that complete it. If you have never tasted them, try them, you will be thrilled!
450 grams of spaghetti
500 grams of sea razor
150 grams of cherry tomatoes
1 clove of garlic
2 tablespoons E.V.O. oil
Fresh parsley to taste
Salt and pepper to taste
Procedure:
We start by washing under running water, inside a colander, our razor until they stop throwing sand and the water will be clean. We wash and cut the tomatoes in half and put them aside. That done, we can start. In a sauté we put two tablespoons of oil and the clove of garlic skinned and crushed. Let's fry it with sweet flame and Togliamolo just done. Put the razor, raise the flame to the maximum and smudge with the wine then copriamole with a lid and let them cook a few minutes or the time to open all. As soon as the razor are ready, scoliamoli and put aside. Add the tomatoes to the sauce and let another 10 ' cook. In the meantime, we cook the pasta in plenty of salted water but for half the expected cooking time elapsed, scoleremoing the pasta while keeping some water. Dump in the sauté and we continue cooking there. Add half finely chopped parsley and let's cook. In the meantime we shell the razor and keep someone whole for the decoration. We check the cooking of the pasta and, if necessary, add cooking water. As soon as it's al dente, we add the shelled razor and the whole ones and we do it. We blow to amalgamate the ingredients well and prepare for the impiattamento.
Tips for mise en place:
With the help of a kitchen pliers or a fork and a ladle, we wrap our portion of pasta and put it on the plate and make it spread out along the length of the dish. Let's take some razor and put it next to the pasta. We complete the dish with a drizzle of oil, a handful of chopped parsley and a minced pepper.
Enjoy your meal!!!!!
