A memory of the youth of the Summers Post diploma, is that of the evenings between friends spent laughing and joking. During those evenings could not miss something to eat. Normally we opted for the rotisserie, the croissants or for some dishes to the height of our culinary skills: garlic pasta, oil and chilli or crepes. The latter, in fact, did not require any particular culinary preparation, practically perfect for kids engaged in the first few times in the kitchen… The result was however more than greedy in their sweet version. Exactly in the “version” since this delight is perfectly suited to both sweet and savory preparations (as we have enjoyed in the family). We see the very few ingredients necessary for the preparation.

500 ml of milk
2 eggs
250 grams of flour
obtained a smooth and without lumps, cover the boule with film and let it rest in the fridge for an hour or so. After the rest time, we pull the bowl out of the fridge and mix some more with the whip. We put a pan on medium heat and as soon as it is hot, ungiamola with a sheet of absorbent paper passed on the butter then pour a ladle of batter and we rotate the pan to distribute it over the entire surface. We cook for 3 ‘-4 ‘ per side so we start to stack the crepes in order to keep them warm.
That you decide to opt for the sweet version or for that salt, the important thing of a crepes, before being served, is that it is folded to “wallet” or should be topped, then folded in half and again in two.
